PETITE LEMON ZEST COOKIES FOR THE ENTIRE FAMILY
If you're looking for a light sweet treat, then these tart lemon cookies are for you. I love anything with a hint of fresh lemon zest, so these hit the spot time and time again. Perfect for showers and celebrations alike, or just for fun on any given afternoon. The drizzle dresses them up and gives them a pretty texture. They're quick and easy to make too! Here we go...
INGREDIENTS
1 cup flour
1/4 tsp baking powder
1/4 tsp salt
1/3 cup sugar
1/2-1 tsp lemon zest (to taste)
1/2 cup softened butter
1 egg
1/2 tsp almond extract
1/2 cup powdered sugar
Juice from 1/2 lemon
DIRECTIONS
Preheat the oven to 350 degrees Fahrenheit and cover your baking sheet with parchment paper. In a medium bowl, combine the following dry ingredients: flour, baking powder and salt.
In a large mixing bowl, mix sugar, lemon zest, and butter until fluffy and combined. Add the egg and almond extract and mix until the ingredients are combined. Finally, add the dry ingredients and mix until combined.
Using a spoon or small cookie scoop, measure out tablespoon-sized pieces of dough and place them on the baking sheet. Bake for 10-15 minutes, depending on your oven. I bake mine for approximately 10 minutes.
While the cookies bake, make the lemon icing by whisking together the powdered sugar and lemon juice. When they cookies are cool, drizzle each cookie with icing and enjoy. (I typically use a fork for the drizzling)
