Simple Crockpot Chicken Tortilla Soup

My mother-in-law recently shared this simple recipe with me and its a winner. So satisfying and painless to make — perfect after a chilly winter day!

I can’t wait to enjoy it again before the season is over. Even better — you make it in a crockpot, which is always the best for busy days. I think I may try freezing a batch and divide it into smaller dinner portions (I use these containers for freezing soups and spaghetti sauce). This makes for quick, easy meals and it'll be great to have on hand when our new arrival joins us next month!

I simply can't believe we only have six weeks to go! At the beginning of next month, I plan to make more recipes that yield large portions so I have several delicious options ready to be reheated for the family.

Recipe —

Sauté
1/2 bell pepper 
1/2 white onion

32 oz chicken broth 
1 rotisserie chicken (deboned) 
2 packs taco seasoning 
2 cans corn (drained) 
2 cans black beans (drained)
1 1/2 block of cream cheese 
2 cans crushed tomatoes 
2 tbsp minced garlic 

Cook low all day in crockpot. Garnish with avocado & sour cream. Tortilla chips for scooping, if desired!
